From the streets of the nawaab city comes the variant that is simply amazing. The rice is cooked separately in local spices and the marinated meat is added much later. One thing is for sure — the rice will have as much flavour as the meat.

Coming from the region of Sindh, this biryani is filled with dry fruits and nuts. Not the first choice for many, but a tasty treat nonetheless.

Meat Biryani. For this dish I sliced the meat into thin slices and pressure cooked it for a good 9 whistles . Indian meat is tough. I decided to go against using lemons because it is rather a denaturant. Half cooked the rice separately and added it to the meat and its gravy , slow cooking it for a good 20 mins . 4. Memoni Biryani
Hailing from Gujarat, this one is as spicy as any biryani can get. Slit chillies, fewer tomatoes, yoghurt, lamb, and potatoes come together to give us this marvel that you won’t be able to stop eating.

I normally get a veg diet dabba from Vital Foods for lunch. This is obviously not that. Today I couldn't catch my Dabba so I called for a mutton biryani from Lucky in Bandra. They delivered it in just about 20 min to our house which is not too far away from them. You can customise and ask for less masala or extra alu. Their 'Less masala' is still too much for a Bengali and the best way for me to enjoy it is to not think of it as the biryani I've grown up on . It's not too bad then. This one is cooked in true Maharashtrian style. Every grain of rice is separate from the spices and the meat. You can clearly distinguish all the ingredients, and for those who love a good onion and tomato raita, well, then Bombay is your calling.
